The microphone is how the app hears the string and calculates the pitch. Without that permission it cannot measure tuning. iOS asks the first time; you can change it later in Settings.
No. Sound is processed on the device, in real time. Nothing is recorded, stored, or sent to a server.
Yes. Once installed, the tuner does not need the internet. Measuring pitch and switching instruments happen on the iPhone itself.
